 Sausage and Lentil Casserole

Ingredients
  • 300g Pork Sausages, sliced into 2cm chunks
    150g Dried Green Lentils
    Teaspoon of chilli flakes
    200g or 1 tin of tomatoes
    400 ml chicken/vegetable stock
    2 cloves of garlic, finely chopped
    2 Onions, chopped
    2 Carrots, peeled and sliced
    Teaspoon of ground coriander
    Teaspoon of mixed herbs
    Tablespoon of chopped flat leaf parsley


Method

Into a large pot pour a tablespoon of olive oil and begin to fry your onions. When the onions begin to colour add garlic, carrots and sausages. Add lentils and herbs, coriander and chilli flakes stir fry for 2-3 minutes and make sure lentils are coated nicely in oil. Add tomatoes and the stock and season well with salt and pepper, put your lid on and turn heat right down and cook for 2 hours stirring occasionally. Just before serving squeeze the juice of half a lemon into the casserole and top with chopped parsley and a drizzle of olive oil.

This literally kept me alive while I was a student, try it, it's incredible (hopefully not just because I was starving hungry all the time)

Whenever i hear about pork, My mouth start watering. Yesterday, My mother has baked pork sausage. So i think that she refuse to bake this pork recipe tomorrow.
